Fruity Flapjack (Low FODMAP Recipe)

Low-FODMAP Fruity Flapjack

I love making flapjack and have made a few different variations over the last few months. This recipes aims to be slightly healthier, although it is still very sweet! I like to make a batch at the weekend ready for the week so I can grab one on my way out to the gym as a little energy boost. You can add nuts if you like, but I react badly to them so I have left them out.

Preparation Time: 15 mins

Cooking time: 30 mins

Makes: 15 small flapjack slices

Ingredients:

  • 150g butter or lactose-free equivalent
  • 175ml golden syrup or maple syrup
  • 250g oats
  • 25g sunflower seeds
  • A handful of any fruit that you like – I used blueberries and chopped strawberries

Instructions:

1. Pre-heat the oven to 180°C

2. Heat the oil and butter in a large saucepan on a low heat until melted

3. Stir in the oats until evenly mixed

4. Add the seeds and fruit and stir until mixed through

Low-FODMAP Flapjack Mixture

5. Pour into a lined baking tray and spread it flat with a spatula or the back of a spoon.

6. Bake in the oven for 25 to 30 mins until golden brown. You can score guides for the slices while it’s warm if you like. Leave to cool, cut into squares or triangles and enjoy!

  1. These look great, it’s all about making your own low fodmap flapjacks! We have a recipe we keep tweaking depending what ingredients we have and also sometimes top with some chocolate if feeling indulgent!

  2. Delicious. Reduce the golden syrup and add a mashed banana for an alternative.
