Eighth Week of FODMAP Diet – Reintroduction Phase

Well, I can’t believe it’s been 8 weeks! I’m feeling so much better after removing FODMAPs from my diet. Despite a few setbacks (and I’m sure there will be many more to come!) I really looking forward to continuing my life on this diet, and finding out which things I can actually eat.

So, after my apple and blackberry crumble last weekend I decided to test my sensitivity to apples again during the week. I bought an apple on the way to work and had it after my lunch on Tuesday, to make sure I’d fully recovered from Wednesday. I didn’t feel too bad for the rest of the day, so I thought I was safe, but the next day I really didn’t feel well at all. I’m not sure if it was a delayed reaction to the apple or a reaction to something else, like the peanut sauce I made for my stir fry. More testing required I guess! I’m going to cut out nuts completely, as I have a suspicion I’m really reactive to them, and then test another apple next week.

I had my stir fry a few times in the week, and I’ve also been having sushi for lunch as it’s quick and easy to buy when I don’t have time to cook. I also tried testing tomatoes again. This time I used whole, fresh tomatoes to make a curry sauce from scratch, which ended up being delicious and causing me no issues at all. I hadn’t had a curry in 8 weeks, so even though I had to buy lots of ridiculous ingredients and it took aaages to make, it was totally worth it. Recipe to come soon!

I’m continuing my workouts 3 times a week, usually with a smoothie afterwards, and I’m really enjoying it. Although I am probably the worst one in the group, I can feel myself getting stronger and fitter, which is really encouraging.
